I installed ClassicPress using WP 6.8.X some time ago. Everything was good. Then I received an update for WP 7.0. When I updated WP, the favicon changed from CP to WP.
I changed from child theme to parent CP theme, reinstalled the CP theme, and finally disabled all the plugins, re-ran the Switch to CP. That worked.
We have found that some hoisting providers run a security focused solution on their servers that detects changes in WordPress files (amends to core files is a common sign that WordPress has been taken over by someone else) and on a daily basis, if alterations are noted, WordPress is re-written to the server.
So, speak to your hosting provider, see if they support ClassicPress and ask if they have these security solutions running on the server.
In the meantime, there are simple ways to check what code is running your site.
1/ The icon in the top right of admin, “w” for WordPress, feather icon for ClassicPress
2/ The version number at the bottom right of admin screens should be a good indicator
3/ Visit Dashboard > Updates and see if the site tells you about WordPress or ClassicPress updates
